Loaded Wedges & Meatballs: Mexican Style

Ingredients

  • Angel Bay Gourmet Beef Meatballs
  • Wedges
  • Smoked Paprika
  • Red Onion
  • Tomato Salsa
  • 1 cup Grated Cheese
  • 1/2 cup Sour Cream
  • 1/4 cup Fresh Coriander

Method

  1. Prepare your wedges according to the product instructions.

  2. In a heated pan, fry off red onion for 3 minutes or until soft, then add in 1/2 teaspoon of smoked paprika and the taco spice and cook for 1 minute.

  3. Add your Angel Bay Gourmet Beef Meatballs to the fry pan and cook for 8 - 10 minutes.

  4. Once your wedges and meatballs are cooked, place the wedges on a heatproof serving plate and spoon the meatballs on top.

  5. Sprinkle cheese on top of the meatballs and grill until the cheese is melted.

  6. To serve, spoon a dollop of sour cream and tomato salsa on top of the wedges and meatballs or spoon into individual ramekins on the side.

  7. Sprinkle with chopped coriander and fresh salt and pepper and serve with half a lime.
