Korean Bacon Veggie Burger

Vegetarians look away, because this buger is for the emerging flexitarian market. Not hot on the latest lingo? A flexitarian is a person who has a primarily vegetarian diet but occasionally eats meat or fish.

They're a patron who likes the best of both worlds and will get a kick out a streaky bacon and slaw stack atop our new veggie patty, topped with lashings of spicy Korean mayonnaise. Delish!

Ingredients

  • Angel Bay Gourmet Veggie Burger Patties
  • Streaky Bacon
  • Brioche Buns
  • Korean Mayonnaise
  • 1/2 cup Mayonnaise
  • 1 tsp Sesame Oil
  • 1 tsp Korean Spice Paste (Gochujang)
  • Slaw
  • 1 cup Rice Vinegar
  • 1/2 cup Caster Sugar
  • 1/2 tsp Ground Turmeric
  • Sliced Red Onions
  • 2 cups Red Cabbage, sliced

Method

  1. Create the slaw by whisking together the rice vinegar, caster sugar and turmeric. Add the red onions and cabbage then set aside for 15mins.

  2. Create the Korean mayonnaise by adding the mayonnaise, sesame oil and Korean spice paste to a medium-sized bowl.

  3. Cook your Angel Bay Veggie Patties according to the pack instructions. While the patties are cooking, heat a small amount of oil in a fray pan and fry off the streaky bacon.

  4. To assemble the burger, sandwich the Veggie Patty between 4 slices of streaky bacon and place on the bottom bun. Place the slaw on top and cover in the Korean mayonnaise. Add the top bun and serve.
