Meatball Breakfast Tacos Recipe

Ingredients

  • Angel Bay Beef Meatballs
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 12 tortillas - preferably soft.
  • 1 avocado, smashed
  • 3 to 4 tablespoons cheddar cheese
  • 1/4 cup chopped cilantro leaves, optional
  • Sweet chilli sauce, optional
  • 1 red capsicum, thinly sliced
  • Red onion, optional
  • Lettuce, diced (about 3 cups)
  • Lime wedges, optional

Method

  1. Cook the meatballs for 10-12 minutes on a hotplate/frypan if frozen. Halve that time is meatballs are thawed.

  2. Warm the tortillas one at a time in a clean, dry skillet over medium-high heat. Warm until the side starts to char a bit, about 20 to 30 seconds, then flip to the other side and repeat. Move the warm tortillas to a plate as they are ready. You can also warm all the tortillas at once in a microwave (30 seconds).

  3. Assemble the tacos, place the lettuce, guacamole, capsicum, red onion, meatballs, sweet chilli sauce, cheddar, and coriander. This order is just a recommendation, you can build the meatball breakfast tacos in whatever order suits.
