Saucy Tomato Meatballs and Mashed Potatoes

Saucy meatballs over a bed of mash reads well on any menu or special board. Warm the hearts and bellies of your customers with this perfect winter warmer recipe using your Angel Bay Gourmet Beef Meatballs.

Ingredients

  • Angel Bay Gourmet Beef Meatballs
  • 5 Vine Tomatoes
  • 400g Chopped Tomatoes
  • Russet Potatoes
  • Onion
  • 1 tbsp Butter
  • 2 Garlic Cloves
  • 2 tbs Tomato Paste
  • Olive Oil
  • Parsley

Method

  1. Preheat oven to 200°C. Place vine tomatoes on a tray. Cover in olive oil and salt. Roast tomatoes for 20 minutes.

  2. Peel potatoes and cut into chunks. Place in a sauce pan filled with salted water and bring to the boil. Cook until tender. Drain and return to the pan.

  3. Add 2 tbsp of butter, season with salt and pepper and mash to your preferred consistency.

  4. Fry off the onion in a medium pan until softened. Add chopped tomatoes, Italian seasoning and tomato paste. Reduce for 5 minutes. Season with salt and pepper to taste.

  5. Add Angel Bay meatballs to the sauce and cook for 10-12 minutes.

  6. Plate up mash potato and place meatballs and a generous amount of sauce on top. Finish with roasted vine tomatoes, parsley and serve!
