Brazilian Veggie Burger Recipe

Spice up your menu with this brilliant, Brazilian Veggie Burger! Our new Veggie Patty has the perfect texture and taste to bring out the playful flavours in this burger. One bite and you'll be transported to the east coast of South America, where the burgers are cool, zesty and vegetarian.

Ingredients

  • Angel Bay Gourmet Veggie Burger Patties
  • Handful of Mesclun
  • Cucumber, sliced
  • Burger buns
  • Chimichurri Sauce
  • Small bunch of Flat Leaf Parsley
  • 1 Tbsp Oregano
  • 1 large Red Chilli
  • 3 x Garlic Cloves
  • 1 tsp Smoked Paprika
  • 2 x large Pickled Gherkins
  • 2 Tbsp Red Wine Vinegar
  • Olive Oil
  • Lime and Avocado Mayo
  • 1/2 cup Vegan Mayonnaise
  • 1/2 large Avocado
  • Small bunch of Coriander
  • Juice of 1 Lime

Method

  1. Pull apart the parsley and combine all the Chimichurri ingredients in a small bowl.

  2. Add all the lime and avocado mayonnaise ingredients to a food processor and blitz until smooth.

  3. Grab your Angel Bay Veggie Patties and cook according to the instructions on pack.

  4. To assemble the burger, slather a generous dollop of the lime and avocado mayonnaise on the bottom bun, followed by the cucumber, gherkins and your Angel Bay Veggie Burger Patty. Top with mesclun, red onion and a healthy spoonful of chimichurri sauce - bonus points if it oozes down the size. Pop the top bun and serve!
