Chipotle Halloumi Veggie Burger

This burger is light and refreshing - a trio of tastes balancing the saltiness of the halloumi with the sweetness of the slaw and the smokiness of the chipotle. All held together by our brand new, deliciousveggie patty.

Reminiscent of Summer BBQs, this chipotle halloumi veggie burger is the perfect brunch or lunch menu burger.

Ingredients

  • Angel Bay Gourmet Veggie Burger Patties
  • Halloumi, cut in 1cm thick slices
  • Brioche Buns
  • 1 cup Red Cabbage, shredded
  • 1 x Carrot, shredded
  • Small bunch of Coriander
  • 4 x Radishes, shredded
  • 2 x Limes
  • Lettuce
  • 2 Tbsp Mayonnaise
  • 1 Tbsp Chipotle, plus a little extra for the top bun
  • 1 Tbsp Olive Oil
  • Pinch of Chilli Flakes

Method

  1. To prepare the slaw, squeeze juice of limes into a small bowl, add the chipotle and combine. Throw in the cabbage, carrots, radishes, coriander, olive oil and chilli flakes making sure to coat well.

  2. In a separate bowl, mix together a spoonful of mayonnaise and chipotle and set aside.

  3. Cook Angel Bay patties according to the pack instructions.

  4. Whilst the patties are cooking, heat some oil in a pan. Fry halloumi for 30 seconds each side or until lightly browned.

  5. To assemble the burger, lightly spread the chipotle mayonnaise on the bottom top and buns. Starting from the bottom up, add the slaw, halloumi, veggie patty, lettuce and finally the top bun. Serve while hot!
