Lamb Rissoles With Pearl Barley Salad Recipe

Ingredients

  • Angel Bay Gourmet Lamb Rissoles
  • Tzatziki
  • 1 Cup Pearl Barley
  • Tomatoes, chopped
  • Cucumber, thinly sliced
  • Sping onion, thinly sliced
  • Celery, thinly sliced
  • Lemon
  • Mint
  • Olive Oil
  • Salt & Pepper

Method

  1. To prepare the salad, cook the pearl barley according to the product instructions, being sure to cool completely before continuing. Thinly slice tomatoes, celery, sprint onion and a handful of mint. Combine all ingredients in a bowl.

  2. In a separate bowl, combine 2 tbsp of olive oil, a squeeze of lemon and salt and pepper to taste. Drizzle over salad ingrdients while tossing lightly.

  3. Cook the Angel Bay Gourmet Lamb Rissoles according to the product instructions.

  4. To serve, transfer rissoles to the plate. Place a cup of salad alongside the rissoles with a large dollop of tzatziki. Garnish with a fresh sprig of mint, half a cut lemon and a crack of pepper.
